Traditionally described as pure pot Irish whiskey, this style was once the most popular dark spirit in the world. Almost lost to the mists of time, the resurgence in pot still whiskey is one of the success stories of the growth in Irish whiskey globally.
A combination of malted barley, unmalted barley, water and yeast. The malted barley will be produced to our individual peat (20PPM) specification by dedicated maltster houses located across the island of Ireland. The whiskey will be aged for 10 years in Bourbon barrels to deliver the classic style of triple distilled Irish pot still but with a uniquely smooth smoky flavour.
With the demand for peated whiskey increasing across Europe, the USA, and in developing markets our Irish peated pot still whiskey from the Cnoc Buí Distillery will certainly differentiate us from those looking for new ways of enjoying peated whiskey.
By combining peated Irish malt and unmalted barley our whiskey will have a distinctive smooth, velvet, full and oily texture with a sweet and smoky long lasting finish.

Packed full of flavour, imagine Christmas cake, dried figs and sultanas combined with Cuban cigar mellowness and you will begin to see where we are coming from. A medium peat (20PPM), a smooth creamy mouthfeel, with pot still spice and a smoky finish will bring a new style of whiskey from the West Coast of Ireland.

28PPM | 10 YEARS | BOURBON & OLOROSO AGED
OUR MEDIUM PEATED SINGLE POT STILL AGED IN BOURBON AND OLOROSO CASKS
The balance of peated pot still aged in Bourbon and Oloroso casks is a rarity across any whiskey landscape. But here in Connemara we will age our whiskeys for 10 years in a combination of these casks.
The rich Sherry character of Oloroso will come through and combine with the unmalted and medium peated malted barley produced to our individual specification (28PPM). This triple distilled pot still whiskey will bring a unique balance of smoke and sweet to the palate.
Pot still is the whiskey of choice for those in the know and has seen unprecedented demand in the last few years - peated pot still brings this classic Irish style to a new level. Cnoc Buí Single Pot Still Irish whiskey will also carry the saltiness of the coastal warehouses and the influence it will have on our Bourbon and Oloroso casks.

Introducing a new strongly peated style of triple distilled Single Malt whiskey aged on the coast of Connemara.
The malted barley will be produced to our individual peat 55PPM specification by a dedicated maltster house and will be aged in 1st fill Bourbon barrels to deliver a new style of triple distilled Irish Single Malt whiskey with a robust smoky flavour.
A very distinct style of whiskey that will appeal to peat seekers globally.
80PPM | 8 YEARS
OUR HEAVILY PEATED SINGLE MALT WHISKEY WILL BRING A MODERN STYLE OF WHISKEY MAKING TO CONNEMARA
A modern style of whiskey that will be introduced to the far west of Ireland.
The heavily peated malted barley will be produced to our individual specification (80PPM) by a dedicated maltster house and will bring the unusual combination of triple distilled malt whiskey with a heavily smoky flavour.
By using one hundred percent peated malted barley and ageing our whiskey in first fill Bourbon barrels we will have a uniquely distinctive peat aroma on the nose, followed by the wonderful combination of sweet and peat monster smoke on the palate.
